Chicken Gumbo

Ok, it didn't quite come out as expected. I collected a few recipes for Chicken Gumbo, specifically quick cooking ones because I’m short on time especially now with 2 classes. Anyway, I tried omitting a few things and going light on others being the picky eater that I am. And, I probably simmered for a half hour longer than the recipe call for. Needless to say, it turned more into chicken in tomato sauce than a gumbo-like soup. It wasn’t bad, just not what I think gumbo is supposed to be. I’ll have to try this on again. Maybe add a more Cajun Spice blend, but I’m not sure about the peppers.
