Gumbo, third time's the charm
So I'm on my great quest to pick up cooking again – one step at a time. I started with Chicken Tortilla Soup in September. Actually it was a very modified version of the recipe, picky eater. And then there was the chicken gumbo of October. I don't eat things that swim (long story). I did try again – less tomato this time, and it still wasn’t great. On the third try, I think I finally reached something decent – at least for me. I opted for the bell peppers, just half of one for the batch. I didn't realize that peppers have a lot of good stuff in them. This time, I got it right. Not too spicy and not a tomato sauce. The good news too is that it freezes well so I can make up a batch and eat it on nights there is nothing easily accessible. I wonder what I'll try next. I’m thinking something that's not a soup.
