The Corn Muffin Almost Fiasco

In my world of scheduled routine, I keep my weekday breakfast and lunch pretty much the same (actually very much the same). Why? Because it saves thinking time and when you live by a train schedule, you need all the time back that you can get.

Since I get up before the crack of dawn, by the time 8 A.M. rolls around, I'm ready for breakfast again. For the last year, I've been taking corn muffins to work instead of the croissants that I had been taking for the previous year or two. They have to be fairly healthier right?

Mom had been making me up a batch every couple of week (huge thanks). With things getting even crazier in the past week or so, as if they weren't already crazy enough, I figured I'd better try my hand at the task.

Back in the day, I liked to bake, but with schedules becoming as compressed as they were, I just didn't have much time left. So I set about making a batch. The good news is that I think they turned out ok. I didn't burn them. I even baked them through. No muffin soup from what I could tell. For good measure, I tried a few of the smaller ones and didn't get sick. That's always a good sign.

The only mistake that I have to admit to is I dropped the wet ingredients on top of the dry. That's a no-no that I now remember in hindsight. With muffins, you want to barely mix them once the wet and dry ingredients are mixed together. Otherwise, you end up with chewy muffins. So by putting the wet on top of the dry, you have to mix longer and you may not scrape all the dry stuff off the bottom of the bowl. Oops! In the end, they still seemed to turn out ok and it's just me eating them anyway.

Mission accomplished, if I do say so myself. So that's another thing to add to my Saturday routine – make muffins.

If I really decide to get crazy, I may try making even healthier ones – whole wheat banana nut I'm thinking, but since I don't usually eat bananas I'm not sure how that experiment will work out. I'll let you know if I decide to experiment. There is a long weekend coming up with no plans, now that I think about it.
